This Valencian winery 80km inland is a ‘Vino de Pago’ estate: a single vineyard granted Denominación de Origen Protegida status for its winemaking tradition rather than an entire region. Winemaker/viticulturalist Toni Sarrión works mainly with indigenous (and historically overlooked) varietal Bobal at high altitude; This medium-bodied organic number has lush cassis, red cherry and smoky cinnamon flavours, juicy acidity and super gentle tannins.
