First things first- Hi! I'm Meghan, the new North American (ie Canadian) in the shop. I've been running Gastro Pubs in London for the past few years but decided a month ago to focus on my passion and devote myself to wine! One of the biggest changes in my life (apart from how much more wine I'm drinking) has been all the cooking I'm doing - when working with it day in and day out you kind of go off it and I never had the energy to get excited about cooking food when I got home... But now I cook to create flavours to complement the wine I want to drink.
One of my recent successes (I've just started cooking so I fail more often than not) has been in honour of the Allende Rioja Bianco. Julia gave me a taste one day and it really knocked my socks off! I'm a firm believer of keeping flavours regional but didn't want to go down the stereotypic route of tapas and I also wanted to keep it quite light and healthy. It was my hubby who had the lightbulb moment - roast salmon with roasted cherry tomatoes, green beans, capers, black olives & anchovies. Magic!
The Allende Rioja is a truly modern style Rioja - no hints of oxidative qualities here - bright citrus aromas, glorious acidity and wonderfully integrated oak. The saltiness of the ingredients and the oily nature of the salmon were cut through brilliantly by the acidity and the oak was so mellow! I rarely drink without food but I had my last glass after my plate was empty and reveled in it!
Substituting chicken for the salmon would be great too and I think I might try pushing the wine to see if it will stand up to a sausage tray bake of some kind - I think it will!
